Sycuan Casino presents the Grilled Cheese Challenge! Three of Paipa’s Buffet‘s chefs were challenged to put their own spin on the classic grilled cheese. The three sandwiches were judged by a panel of three based on presentation, taste, side dish, cohesiveness and creativity.
One grilled cheese will be featured on the Paipa’s Buffet menu each week during the month of June so you can judge for yourself!

Pork Lover’s Melt by Chef Thomas Rothrock (June 11-15)
Shredded smoked pork, thick black peppered bacon, caramelized onion-bacon jam, jalapeño cream cheese, and Tillamook sharp cheddar. Grilled on Texas toast with bacon and pepper Jack cheese butter. Accompanied by crispy Brussels sprouts, bacon lardons, shaved parmesan, and balsamic glaze.
Portobello Grilled Cheese by Chef Francisco Cano (June 4-8 and June 25-29)
Grilled portobello mushroom, pancetta, avocado, harissa, fontina and white cheddar cheese and balsamic glaze on sundried tomato pesto bread. Served with creamy tomato basil soup.
LT Grilled Cheese by Chef Alfonso Bautista (June 18-22)
Lemon thyme sourdough bread, grilled shrimp in tarragon-shallot butter, mascarpone cheese, and Comte cheese. Served with citrus & strawberry arugula salad: Strawberries, watercress, mandarin oranges, ruby red grapes, shaved fennel, crispy shallots, and charred lemon vinaigrette.
